•1/2 cup unsweetened Almond Milk
•1/4 tsp salt
•1/8 tsp pepper
•1 cup low-fat or fat free shredded Cheddar cheese (4 ounces)
•1/2 cup chopped zucchini
•1/4 cup chopped red bell pepper
•1/4 cup chopped green bell pepper
•2 tablespoons chopped onion
Preheat oven to 350 degrees Fahrenheit.
Beat eggs, milk, salt and pepper in bowl until blended. Add cheese, zucchini, peppers and onion, mix well.
Spoon into 12 lightly sprayed muffin cups, about 1/4 cup each.
Bake until just set, 20--22 minutes. Cool on rack 5 minutes. Remove from cups and serve warm. Makes 12 mini egg muffins.
Fruit -N- Oatmeal Squares
Makes 10 servings
•2 cups Steel Cut Oats
•3/4 Cup of Honey
•1 Tablespoon Cinnamon
•1 tsp baking powder
•1 Cup Raspberries, blueberries, Strawberries (whatever you choose)
•1 Cup walnuts, chopped (optional)
•2 Cups unsweetened Almond Milk
•1 large egg
•1 Tablespoon Vanilla Extract
•1 Banana, peeled and sliced
Preheat the oven to 350 degrees.
In a large mixing bowl combine the oats, honey, cinnamon, baking powder, and half of the fruit(not Including banana) and walnuts. Mix well.
In a separate bowl, combine the milk, egg and vanilla. Stir until mixed well.
Spray a 9 X 13 baking tin with olive oil cooking spray
Spread the oatmeal mixture out evenly in the pan. Consistancy should be thin. Now cover the top evenly with the milk,
egg & vanilla mixture. Shake the pan a little if you need to get that milk to settle in.
Top it with the remaining fruit and banana slices then place in the oven for 35-40 minutes.
Let cool on racks before you try to cut it. Once cut into squares, you can freeze these and pull them out when you want one! Toss it in the microwave for 30-45 seconds, and its ready to eat!
1 large onion chopped
2 pounds ground turkey
2 eggs blended
1/2 cup oatmeal
1/2 cup no sugar added organic applesauce or 1 large apple and 1/4 cup water blended in blender
1 large can sodium free tomato paste
2 Tbs organic Agave Nectar
1 tsp Worcester Sauce
1 tsp mustard
1/4 tsp chili powder
1 tsp mrs. Dash sodium free
S & P to taste
Olive Oil Cooking Spray
Saute chopped onion in cooking spray until translucent. Mix ground turkey, onion, oats, eggs, applesauce, 1/4 cup tomato paste, mrs dash and salt and pepper. Make meat into two loafs and put into loaf pans sprayed with cooking spray.
In a separate bowl, mix remaining tomato paste, agave nectar, Worcester, mustard and chilI powder. Spread mixture over top of loaves. Bake for 45 minutes at 375 Degrees. Turn broiler on low and broil top for 1-2 minutes. Keep an eye on it so the nectar doesn’t burn.
2-3 cups broccoli florets
1/2 c. Dried cranberries
1/2 c. sliced or chopped almonds
2 strips turkey bacon - cooked and chopped
1/2 c. Greek yogurt
2-3 tbsp. lemon juice
1/4 c. White vinegar
1 tbsp. garlic powder
2 tsp. onion powder
1/8 honey mustard dressing
Cut stems off florets and make sure pieces are small and bite sized. Mix dry ingredient together.
Combine dressing ingredients and pour over dry ingredients. Stir and serve.
Tuna & Sweet Pickles
3 Boiled & peeled eggs.
1/2 c. sweet pickles
1 stalk of celery
1 can of solid white Albacore Tuna
Whole wheat bread
Chop and mix the eggs, sweet pickles, celery and tuna. salt/pepper & pickle juice to taste.
Spread on bread and add lettuce, or omit the bread and have the tuna on Romaine.
Makes one serving.
3 ounces vanilla nonfat Greek yogurt
1 tablespoon almond butter
1/2 cup frozen blueberries
1/2 cup frozen pineapple
1 cup kale
3/4 cup water
Place all the ingredients in a blender, and mix until smooth.
Enjoy immediately. For those of you worried about the kale, don't be!
